Why I Was A Failure As A Waitress, Reason 1. It pains me to admit it, but this conversation is pretty close to verbatim. I never did figure "it" out, either. Consistently did well in tips (percentage-wise, I mean), but never got good at pushing extra stuff. Sorry this one's so messy. Hastily drawn on lunch break. - Covers = headcount, basically. We actually didn't use the term "covers" at the bar, but did at the restaurant I worked at later.
